Sophie’s Dublin has reopened following a major renovation, unveiling a new menu, interiors and rooftop experience

One of Dublin’s most beloved rooftop destinations is entering an exciting new era.

Leading the kitchens across Dublin, Cork and Galway, Group head chef Marcin Kolnierzak has created a menu designed for sharing, celebrating and bringing people together across the Sophie’s rooftops

Sophie’s Dublin, perched above The Dean Dublin Centre, recently reopened following a significant renovation, unveiling a refreshed identity that brings together the energy, atmosphere and social spirit guests have always loved, alongside a new menu inspired by contemporary New York-Italian dining culture.

While the refreshed concept will extend across Sophie’s locations in Dublin, Cork and Galway.

The flagship venue in Dublin has undergone a stunning transformation that reflects the next chapter of the brand.

Designed by interiors studio O’Donnell O’Neill, the space draws inspiration from the energy of downtown Manhattan restaurant culture and the conviviality of Italian dining.

At its center is a striking bar featuring a hardwood counter, terracotta-toned glazed tiles and softly glowing globe lighting, while an open kitchen brings energy and theatre to the room.

Warm timber finishes, gallery walls, layered planting and curated vintage furniture run throughout, while floor-to-ceiling windows continue to showcase the spectacular views across the city.

Built around exceptional seasonal Irish produce and classic Italian hospitality, the menu combines bold flavours, comforting favourites and elevated dishes that match the quality of both the setting and experience.

Guests can begin with 72-hour sourdough focaccia served with rosemary and extra virgin olive oil or Yellowfin Tuna Crudo with yuzu, chili and preserved lemon before moving on to fresh pasta and wood-fired pizzas.

Highlights include the Mortadella Pizza with pistachio pesto, stracciatella and pistachio mortadella, alongside indulgent Seafood Linguine with prawns, mussels, clams and white wine cream.

Comfort classics such as Sophie’s Chicken Parmigiana sit alongside signature desserts including a tableside Chocolate Mousse finished with olive oil and salted caramel, and a Limoncello Meringue Pie featuring Sophie’s own house-infused limoncello.

The drinks offering has also been reimagined, with a cocktail programme inspired by Italian aperitivo culture.

Signature serves including the Triciclo (Prosecco, Cynar, San Pellegrino Grapefruit Soda), Lamponi (Plymouth Gin, Vermouth, Raspberry, Lemon, Whites) and Swing Drop Martini (Homemade Limoncello, Cocchi Americano, Malfy Limone, Sugar Sour Rim) which sit alongside a dedicated Zero Boozini menu, such as Alba Spritz (Tanqueray 0.0%, Elderflower, Apple, Lemonade) delivering full flavour with no alcohol.

Whether it’s breakfast with a view, a leisurely weekend brunch, rooftop cocktails at golden hour or dinner with friends, Sophie’s has been designed to move effortlessly with the rhythm of the day.

The result is a destination that feels vibrant, social and contemporary while delivering the quality, atmosphere and hospitality that have made it a favourite for so many years.

Marcin Kolnierzak, Group head chef at Dean Group, said: “Sophie’s has always been known for its great views, warm hospitality and buzzy energy.

“With this relaunch, we wanted to enhance all the things that make Sophie’s so great and create dishes that people will want to order again and again.

“My personal favourite is the Mortadella Pizza.

“It’s super simple, but the quality of ingredients really make this dish shine.

“Our team has poured a huge amount of passion into this refresh and we can’t wait to share it with everyone.”

As Sophie’s reopens its doors, The Dean Dublin Centre is also unveiling a refresh across its guestrooms.

Alongside renovations to existing rooms, including upgraded finishes, furnishings and updated design details throughout, the hotel also welcomes twenty brand-new guestrooms featuring a fresh design aesthetic.

The new rooms sit within No. 35 Harcourt Street, a restored Georgian building adjoining the original hotel and its Townhouse extension.

Soft greens and warm whites, burr wood furniture, leather headboards and terrazzo-tiled bathrooms with chrome brassware create a refined and contemporary feel.

The same design thread runs throughout the renovated existing rooms, giving the entire hotel a fresh yet familiar character.

Their launch forms part of a wider refresh of The Dean Dublin Centre, with upgrades taking place across the property throughout the summer, culminating in the opening of a soon-to-be-announced new restaurant on the ground floor later this year.

Sophie’s Dublin is more than a restaurant.
