Which is handy since the Chief Executive there, Michael Davern, has his own story to tell in the book.
As a raw trainee at Ballymascanlon House Hotel, Michael will never forget one particular guest having dinner there of an occasion.
“He ordered a rack of lamb from the menu,” recalls Michael, “When the lamb was served, it was pink and had a piece of thyme on it.
“He called me over and said, ‘Excuse me, young fellow, this sheep got caught in the ditch and it’s still bleeding and has some of the ditch still stuck to it. Will you take it back please and have it killed, then cooked?’.”
