Cashel Palace Hotel unveils signature Irish Pot Still Whiskey distilled by Tipperary Boutique Distillery

The Cashel Palace Irish Pot Still Whiskey is now exclusively available at Cashel Palace Hotel, Mikey Ryan’s Bar & Kitchen, Sadler’s Fethard, and Donoghue’s Pub
Cashel Palace Hotel has officially launched its highly anticipated Irish Pot Still Whiskey, a landmark collaboration celebrating the ultra-local terroir, heritage and craftsmanship of the Golden Vale.
This single-estate release offers an authentic taste of Tipperary, utilising barley grown locally at Coolmore Stud farms in the heart of the Golden Vale.
The spirit was distilled by the team at Tipperary Boutique Distillery and matured for three years in first-fill Oloroso sherry casks, creating a beautifully complex and rich profile.
Master distiller Stuart Nickerson notes included the observation that, “The nose leads with a big sherry hit, opening with masses of sweet dried fruit. The palate rich, warm notes of further dried fruits, deep treacle sweetness (think fig and toffee) and a rippling of warming spice and dark chocolate. In short, if you like your whiskey sweet and packed with rich, sherry-cask dried fruit character, this spirit ticks all the boxes.”
Paying homage to its historic surroundings, the bottle’s packaging and typography draw visual inspiration from the ancient lettering of the nearby Rock of Cashel and sacred religious manuscripts.
Speaking about the release of Cashel Palace Whiskey, Adriaan Bartels, generalmanager, Cashel Palace said, “At Cashel Palace, we have always been passionate about celebrating the very best of Tipperary, from our local producers to the rich heritage that surrounds us. The launch of Cashel Palace Whiskey is a wonderful extension of this, bringing together locally grown barley, traditional distilling expertise and the craftsmanship of the Golden Vale. We are delighted to have worked with Tipperary Boutique Distillery to bring this vision to life.”
The Cashel Palace Irish Pot Still Whiskey is now exclusively available to experience and enjoy at Cashel Palace Hotel, Mikey Ryan’s Bar & Kitchen, Sadler’s Fethard, and Donoghue’s Pub. RRP €125 per bottle.
Tipperary Boutique Distillery unveils exclusive ‘Field Notes’ festive gift

Tipperary Boutique Distillery’s ‘Field Notes’ festive gift features two rare 8-year-old limited editions
Tipperary Boutique Distillery is proud to announce the launch of its highly anticipated Christmas release ‘Field Notes’. Field Notes is presented as an ultra-premium, seasonal gift box containing two distinct and contrasting spirits of an 8-Year-Old Single Malt and an 8-Year-Old Single Pot Still.
Designed as the ultimate collector’s set or luxury holiday gift, the premium ‘Field Notes’ seasonal gift box contains two 200ml bottles alongside a branded Tipperary Glencairn tasting glass.
True to the core philosophy of Tipperary Boutique Distillery, the focus of this double release remains entirely on uncompromising quality and originality. Both drams offer an adventurous departure from previous expressions, showcasing their skills in flavour development.
Tipperary 8-Year-Old Single Malt (Festive Edition)
Described by the team as a ‘serious’ dram, this Single Malt represents an exciting evolution for the distillery. Four selected casks were married and re-racked into a sophisticated combination of ex-Vermut Sherry, ex-Oloroso Sherry and ex-PX Sherry casks and then finished for a further 12 months in a single PX cask before being bottled in October 2026.
Tasting Notes: At full strength, this is a serious, robust spirit packed with rich, dark dried fruits and deep, warming winter spices. When opened with a splash of water, the whiskey transforms, unveiling vibrant fresh fruits and a lively sherbet finish.
Tipperary 8-Year-Old Single Pot Still (Festive Edition)
This expression commands attention with its striking appearance derived from its unique maturation history. Originally filled in March 2018, it was expertly re-racked in February 2024 into an ex-Port Cask before its final bottling on 6th October 2026.
Tasting Notes: Defined by the team as pure ‘adventure’, the nose opens with orchard fruits, led by fresh apples and pears. The palate transitions into an exciting combination of fruit, cracked pepper and salt, all rounded out by the velvety creaminess traditional to premium Irish pot still whiskey.
The Tipperary Boutique Distillery ‘Field Notes’ Gift Box will be available in strictly limited quantities for the holiday season and will be available soon at an RRP of €125.00 from www.tipperarydistillery.ie and Number 21 Off-Licence with further stockists to be confirmed in the coming weeks.
