Cocktail of the month: Rum-based

We look at some of the rum-based cocktails out there to tickle your customers' taste-buds.

Rum has a history. Royal Navy sailors used get their daily tot of free rum right up until July 31st 1970 – ‘Black Tot Day’ – when Ministry of Defence austerity married Health & Safety in a partnership that spelled a black day for Britain’s jolly Jack-tars as they waved a tear-stained handkerchief to the days of grog (rum mixed down with water) and those early cocktails comprising rum, sugar, water and nutmeg!

It’s been found today that three in four customers of the UK bar chain All Bar One are happy to pay more for a well-made cocktail. The survey of 5,000 customers found that nearly one-third of males now drink a cocktail every time they go out.

According to the report in the UK trade newspaper The Morning Advertiser Be At One’s Operations Director Andrew Stones claims that today’s cocktail-drinkers are increasingly searching for a quality and premium experience for products and atmosphere when choosing a venue for a night out.

“The results are in keeping with other research that shows greater discernment among drinkers – they’re prepared to spend more on higher quality cocktails,” he told The Morning Advertiser.

The same newspaper reported that sales of rum are growing at 17%.

Here, Nielsen values the Irish on-trade rum market at nearly €64 million MAT to May 2017.

IWSR figures indicate that rum sells some 176,500 nine-litre cases a year of which nearly 100,000 go via the on-trade channel.

10ml sugar cane syrup

3 dashes of Bitter Truth Aromatic Bitters

2 dashes of Bitter Truth Orange Bitters

60ml Diplomatico Reserve Exclusive

Combine Reserva Exclusiva, sugar syrup, Angostura and Orange bitters in mixing glass with large ice cubes. Stir vigorously and strain into an old-fashioned glass over one large ice cube. Garnish with orange zest twist.
